Q. What is the structure of the business?

A. Each day we treat our guests to freshly made, authentic Italian favorites. All of our dishes are served family style and meant to be shared. Buca Small serves 2 or more people and Buca Large serves 4 or more. So bring a date, or the whole office.

Q. Are all of your buildings the same?

A. Though the concept, “feel,” and service are consistent throughout each of the restaurants, the buildings are not the same. Our restaurant facilities include locations where we have done complete building renovations, partial remodels and new construction. Mixing prototype construction and fingerprint design allow us to pick from a multitude of locations. In fact, some sites are located in basements of older buildings. In other locations, guests enter through the kitchen. Most of the Buca di Beppo restaurants feature a Pope’s Table that seats 14 to 18 guests, and some locations have a table for six to eight people right in the kitchen. Each location is its own.

Q. What is the ideal site for a Buca di Beppo restaurant?

A. BUCA, Inc. selects downtown sites, urban districts and suburban locations for its restaurants. Because we can develop a restaurant in any portion of a city we have flexibility as we grow. Certainly, there is no shortage of potential sites. The management team is discerning about the locations it chooses and seeks neighborhoods that complement the Buca di Beppo spirit.

A. At this time, BUCA, Inc. operates only in the United States, however as we grow and fill out our domestic markets, we will look at international expansion as well.

Q. How does a paisano partner differ from a general manager?

A. After completion of the company’s management training program, family members are eligible to become paisano partners. Paisano partners make a personal investment in the business, adding to their financial incentive for success. Their compensation is tied to the success of not only their restaurant, but the success of the company as a whole. Paisano partners make an initial five-year commitment to BUCA, Inc. By comparison, general managers are not necessarily tied to their local community or the success of the company as a whole.
